Placinta cu branza traditionala cu aluat dospit, pufoasa, umpluta cu un amestec de branza dulce si sarata, sucita si invartita, frumoasa si gustoasa va completa masa de sarbatoare cu un desert ca „la mama acasa”. Cel mai greu lucru la aceasta placinta, este sa astepti cuminte sa se raceasca, pentru ca imediat ce o scoti din cuptor, aroma imbietoare se imprastie in toata casa.
INGREDIENTE / INGREDIENTS
(pentru 2 bucati / for 2 pieces)
Pentru aluat / For the dough:
- 500 grame faina / 500 grams flour
- 20 grame drojdie proaspata / 20 grams fresh yeast
- 1 ou / 1 egg
- 1 lingura zahar / 1 tablespoon sugar
- 3 linguri ulei / 3 tablespoons oil
- 250 ml lapte caldut / 250 ml warm milk
- 1/4 lingurita sare / 1/4 teaspoon salt
- 1 lingurita esenta de vanilie / 1 teaspoon vanilla flavour
Pentru crema de branza / For the cream cheese
- 700 grame branza de vaca / 700 grams cottage cheese
- 300 grame cas sarat framantat / 300 grams kneaded salty cheese
- 1 lingurita esenta vanilie / 1 teaspoon vanilla flavour
- 4 oua / 4 eggs
- 3 linguri gris / 3 tablespoons semolina
Pentru placinta / For the pie
- 2 linguri faina / 2 tablespoons flour
- 8 linguri ulei / 8 tablespoons oil
- 2 linguri untura / 2 tablespoons lard
- 1 ou / 1 egg
Pentru foi, cernem intr-un bol faina. In alt bol amestecam zaharul cu drojdia pana devin lichide. Adaugam oul, sarea, uleiul, vanilia si laptele. Turnam acest amestec peste faina si mixam pana obtinem un aluat compact. Impartim aluatul in 4 parti egale si lasam la odihnit 10 minute.
Intre timp pregatim umplutura. In bolul mixerului punem toate ingredientele si le mixam pana obtinem o crema omogena.
Presaram faina pe masa si intindem fiecare bila de aluat intr-o foaie rotunda foarte subtire. Stropim fiecare foaie cu cate 2 linguri de ulei apoi distribuim cate un sfert din crema de branza. Rulam foaia din 2 parti astfel incat sa ne intalnim la mijloc si o incretim, adaugand-o apoi intr-o jumatate de tava unsa cu foarte putina untura. Procedam la fel si cu a doua foaie si o asezam in cealalta jumatate de tava.
Repetam operatia si cu ultimele 2 foi. Ungem placintele cu ou batut si asezam din loc in loc cate un varf de lingurita de untura. Coacem placinta in cuptorul incins la 180 grade Celsius pentru 20 de minute, apoi reducem temperatura la 170 grade Celsius pentru inca 35 – 40 de minute pana cand este frumos rumenita.
O lasam sa se raceasca apoi o putem servi cu multa pofta.

Romanian Cheese Pie
The traditional cheese pie with dough, fluffy, filled with a mixture of sweet and salty cheese, twisted and spun, beautiful and tasty will complete the festive table with a dessert „mother style”. The hardest thing about this pie is to wait for it to cool down, because as soon as you take it out of the oven, the aroma spreads throughout the house.
For the sheets, sift the flour into a bowl. In another bowl, mix the sugar with the yeast until they become liquid. Add the egg, salt, oil, vanilla and milk. Pour this mixture over the flour and mix until get a compact dough. Divide the dough into 4 equal parts and leave to rest for 10 minutes.
In the meantime, prepare the filling. Put all the ingredients in the mixer bowl and mix them until you get a homogeneous cream.
Sprinkle flour on the table and roll each ball of dough into a very thin round sheet. Sprinkle each sheet with 2 tablespoons of oil, then distribute a quarter of the cream cheese. Roll the sheet from 2 parts so that we meet in the middle and crease it, then add it to a half of the pan greased with a small quantity of lard. Proceed in the same way with the second sheet and place it in the other half of the tray.
Repeat the operation with the last 2 sheets. Brush the pies with beaten egg and place a spoonful of lard from place to place. Bake the pie in the hot oven at 180 degrees Celsius for 20 minutes, then reduce the temperature to 170 degrees Celsius for another 35 – 40 minutes until it is nicely browned.
Let it cool , then we can serve it with great appetite.
