Incercam, asadar reteta autentica de Shish Tawook, frigarui de pui la gratar specifice Orientului Mijlociu, cel mai bun orez turcesc si o salata Tabbouleh absolut delicioasa.

Pentru Shish Tawook / For the Shish Tawook

  • 800 grame pulpe de pui dezosate / 800 grams boneless chicken thighs
  • 4 linguri iaurt / 4 tablespoons yogurt
  • 3 linguri suc de lamaie / 3 tablespoons lemon juice
  • 2 linguri ulei de masline / 2 tablespoons olive oil
  • 2 linguri pasta tomate / 2 tablespoons tomato paste
  • 5 catei de usturoi / 5 garlic cloves
  • 2 lingurite boia de ardei / 2 teaspoons paprika
  • 1/4 lingurita fulgi de chilli / 1/4 teaspoon chilli flakes
  • 1 lingurita sare / 1 teaspoon salt
  • 1/4 lingurita piper / 1/4 teaspoon pepper

Pentru orezul turcesc / For the Turkish rice

  • 1/2 ceasca paste orzo / 1/2 ceasca orzo pasta
  • 1 si 1/2 ceasca orez basmati / 1 and 1/2 cup basmati rice
  • 4 cesti apa / 4 cups water
  • 50 grame unt / 50 grams butter
  • 2 linguri ulei de masline / 2 tablespoons olive oil
  • 1 lingurita sare / 1 teaspoon salt

Pentru salata Tabbouleh / For the Tabbouleh salad

  • 300 grame rosii cherry / 300 grams cherry tomato
  • 2 castraveti cornison / 2 cornichon cucumbers
  • 1 legatura mare patrunjel verde / 2 big bunches parsley
  • Sucul de la o lamaie / Juice from 1 lemon
  • 6 cepe verzi / 6 scallions
  • 1 lingurita sumak / 1 teaspoon sumak
  • 2 linguri ulei de masline / 2 tablespoons olive oil
  • Sare / Salt

Pentru Shish Tawook taiem carnea de pui in bucati cu latura de 2 – 2,5 cm. Punem carnea intr-un bol si adaugam iaurtul, sucul de lamaie, uleiul de masline, pasta de tomate, usturoiul zdrobit, boia de ardei, fulgii de chilli, sarea si piperul negru.

Acoperim vasul si lasam la marinat, la frigider, cateva ore, ideal de pe o zi pe alta. Impartim carnea pe 4 bete de frigarui si preincalzim un gratar la foc mediu spre mare. Prajim frigaruile pe ambele parti pana cand sunt frumos rumenite, aproximativ 12 minute.

Pentru orez, incingem intr-o cratita uleiul si untul. Adaugam pastele orzo si le prajim amestecand constant, timp de 2 – 3 minute, pana cand sunt usor aurii. Adaugam orezul, sarea si apa si fierbem sub capac. Eu am folosit Tefal One Pot si am folosit programul special pentru orez cu timp de gatire 9 minute.

In mod traditional salata Tabbouleh contine si bulgur, insa pentru masa de astazi am ales sa nu folosesc cereale, ci doar legume. Asadar, taiem rosiile si castravetii in cuburi mici, ceapa in felii fine si patrunjelul marunt. Adaugam toate ingredientele intr-un bol alaturi de sucul de lamaie, uleiul de masline, sumak-ul si sarea. Acoperim cu o folie si lasam la rece timp de o ora inainte de servire.

Turkish Lunch

When it comes to cuisine, the Turks raise it to the level of art. With delicious kebabs and elaborate mezze dishes, Turkish cuisine is recognized for many internationally famous specialties. Beyond kebabs, meze and gözleme or the famous breakfast tradition for which this country is famous, we find a land of mouth-watering flavors, fresh vegetables and fantastic desserts. Let’s prepare a Turkish Lunch today that will bring us closer to the taste of the East! So we try the authentic Shish Tawook recipe, grilled chicken skewers specific to the Middle East, the best Turkish rice and an absolutely delicious Tabbouleh salad.

For Shish Tawook, cut the chicken into pieces with a side of 2 – 2.5 cm. Put the meat in a bowl and add the yogurt, lemon juice, olive oil, tomato paste, crushed garlic, paprika, chili flakes, salt and black pepper.

Cover the dish and leave to marinate, in the refrigerator, for a few hours, ideally overnight. Divide the meat onto 4 skewers and preheat a grill on medium to high heat. Fry the skewers on both sides until they are nicely browned, about 12 minutes.

For the rice, heat the oil and butter in a pan. Add the orzo pasta and fry, stirring constantly, for 2-3 minutes, until they are slightly golden. Add the rice, salt and water and boil under the lid. I used the Tefal One Pot and I used the special program for rice with a cooking time of 9 minutes.

Traditionally, Tabbouleh salad also contains bulgur, but for today’s meal I chose not to use grains, but only vegetables. So, cut the tomatoes and cucumbers into small cubes, the onion into fine slices and the parsley. Add all the ingredients to a bowl along with the lemon juice, olive oil, sumak and salt. Cover with a foil and leave to cool for an hour before serving.

Serve these delicious dishes with a generous portion of hummus for a perfect lunch.
